


I started this blog merely for journaling my projects, to help motivate me to take pictures of them. I didn't want my Family Blog to get cluttered up with my stuff. I doubt anyone out there is reading....in fact I hope you're not, I hope you are out with your kids today!
If you have ever gone to buy a cute little cupcake at the store and gufawed at the price of a simple cupcake then I challange you to make cupcakes for an event. I made 200 brains for a ward party and then a week later frosted another 200 for a wedding! Very time consuming and tedious, but people go crazy for them right now. Try to appreciate the work that goes into that tiny little thing before you gobble it up complaining about the price!
I asked to make a cake for a friends, daughters, Sweet 16 party. It was a princess theme, and I have tons of fun designing this cake! It really came to life once all the jewels were on. There were a few mishaps including the bottom cake attempting to slide off its stand... I DON'T THINK SO. I went to 3 Michael's to get Duff's new silver graffiti spray....all gone within a day. Who in Hades ran around and bought up all the silver (no other color was out) in idaho just to spite me. Needless to say it was my first time using the silver cake powder/ paint which was.... interesting.
1 box dark choc brownie mix
2 eggs
1/3 cup oil
1/2 cup water
1 cup shredded coconut
1 cup chopped almonds
2 cups heavy whipping cream
1/3 cup powdered sugar
4 TB Bird’s custard powder (I used cook and serve custard jello mix)
2 TB butter
4 TB semi sweet choc chips
Combine brownie mix, eggs, oil, and water. Stir until moistened. In a separate bowl, combine coconut and chopped almonds.
Spoon nut mixture evenly throughout paper liners. Fill paper liners with brownie batter ¾ full. Bake at 350 for 13-15 min, until soft in the center. Remove and cool comp on wire rack.
Meanwhile, whip the cream until firm peaks form. Add custard powder and powdered sugar and combine well. Frost cooled cupcakes with the custard, be generous!
Melt butter and choc in a small bowl in the microwave. Be careful not to burn the choc. Stir every 20 sec. Drizzle cooled choc over the custard cream topping
